Barbacoa Beef Tongue Tacos

Ingredients :
For the Braise :
1 ea. Beef Tongue, rinsed
1/4 ea. Onion, left over from dicing
4 cloves Garlic, crushed
1 bay leaf
1 tsp. Sea Salt
Water to cover
For the Barbacoa Spice Mix :
1 Onion, small dice, end cuts use for braise
2 Tbl. Mexican Chili Paste
INstructions :
In a Pot, Crock pot, or Presure cooker simmer tongue until tender, about 3 hours
Let cool until you can handle it, peel off skin and any tought pieces
Add a spoon of chili paste as desired and season with salt
Add Pulled tongue to mix and warm for serving
Serve with corn tortillas, salsa verde, onion and cilantro
